Required Reading For Aspiring Innkeepers

Many who have had the privilege of staying at a Bed and Breakfast or Country Inn have fantasized about owning one. Those that have gotten the chance to become an Innkeeper, quickly realize that it is a lot more challenging then choosing what color sheets to put on the beds. Hospitality and a smile is a good start, but only the beginning if your Inn is to be truly successful. Below is an excerpt from a story that the Boston Globe ran on May 23 entitled: “Running An Inn Isn’t A Simple Life”. It should be required reading for those considering “Innkeeping” as a future career.

Call Debbie Lennon an innkeeper and she cringes because it’s a word that conjures up images of Bob Newhart, playing a befuddled Vermont innkeeper coping with a leaky roof and wacko townspeople. Lennon, the proprietor of the Kennebunkport Inn in Maine, is more of a professional hospitality manager than a frazzled bed-and-breakfast owner.

Sure, she has her share of leaky faucets, horror guests, and power outages, but in-season, her staff of 50, from general manager to housekeeper, takes care of the daily operational details, while Lennon oversees the strategic direction: marketing, finance, and business administration.“Behind every guest stay, there are hundreds of transactions to produce that experience. People may not understand the dynamics behind the scenes: changing light bulbs, clean bedding, wake-up calls, check-in,’’ Lennon said.

Unlike numerous refugees from corporate America who romanticize the experience of owning a quaint New England B&B and end up burnt out, Lennon knows the ins and outs of owning a hotel firsthand. In college, she worked at a Cape Cod resort, rotating through different positions, including chambermaid, bartender, and room attendant. She went on to train at two major hotel chains, rising to general manager and regional vice president. But she always wanted to own her own business, and purchased the Kennebunkport Inn with her husband 10 years ago.“It’s the classic New England inn; and serendipitously, we had our rehearsal dinner here when we were married,’’ she said.

What advice would you give to aspiring innkeepers?

The hotel business is 24-7. If a property is small, work is completely hands-on, cleaning toilets, making breakfast, or checking guests in. People fantasize about owning an inn and living in New Hampshire or Vermont, where it’s idyllic and a quieter lifestyle, but it’s a lot of hard work.

Father’s Day is a day honoring fathers and celebrating fatherhood, paternal bonds, and the influence of fathers in society. It is celebrated on the third Sunday of June in 52 of the world’s countries. Father’s Day was originally created as a complement to Mother’s Day, in celebrating fatherhood and male parenting. But let’s all be honest with ourselves… Moms get A LOT more attention on their holiday. With its day-long beach parties, afternoon parades, nightly concerts, and dazzling fireworks, July 4th isn’t your everyday holiday – it’s the birthday of the good ol’ US of A, and everyone’s invited to the countrywide party. Whether you’re into paying tribute to American history or just enjoying traditional American summer pastimes, our list of top places to celebrate July 4 has got you covered.


Washinton DC

Washington DC is a spectacular place to celebrate July 4th! The National Mall, with Washington DC’s monuments and the U. S. Capitol in the background, forms a beautiful and patriotic backdrop to America’s Independence Day celebrations. This is an all-day event in the nation’s capital, beginning with a parade along Constitution Avenue and ending with a spectacular display of fireworks over the Washington Monument.

Fireworks Time: At dark, usually around 9:15 p.m. Rain Date: July 5th
Launch Location: The fireworks are launched from the Lincoln Memorial Reflecting Pool and light up the sky over the Washington Monument.



More than 200 events make up a fun-filled week-long calendar during the annual Boston Harborfest, which kicks off in late June and continues through the Independence Day holiday. This patriotic celebration focuses on the city’s strong maritime and colonial heritage, and unfolds, as such, along the waterfront, on the Harbor Islands, and in historic downtown. Expect a slew of events (most of them free), ranging from fireworks, concerts, kids’ days, cruises, tours, and more.


Fireworks Time: 10:30 PM. CBS will start their national broadcast at 10:00 and fireworks will end at 11:00. The events take place along the Charles River between the Longfellow and Mass Ave Bridges on both the Boston and Cambridge sides of the river.



The Taste of Chicago is the world’s largest food festival, held annually for 10 days in Chicago starting Friday before the 4th of July and ending the Sunday after (in the event July 4th is a Saturday, the festival begins on the Friday eight days before). The event is the largest festival in Chicago. Every year, millions of Chicagoans and tourists from around the world flock to Grant Park to enjoy the variety of food prepared by Chicago’s most popular restaurants. Events also include live music on multiple stages, including the Petrillo Music Shell, informational and family oriented pavilions, and nightly film performances. Musical acts vary from established and emerging local artists to nationally known artists like Carlos Santana, Moby, and Kenny Rogers. All performances are free. July 3 is by far the event’s most attended day.

Fireworks Time: To be announced. Chicago has THREE seperate fireworks diplays: The North Side fireworks will be held around Montrose Beach, the South Side fireworks in the vicinity of 63rd Street Beach, plus a third at the Navy Pier.




Where better to celebrate America’s independence than in the city of our nation’s birth – Philadelphia? The old stomping grounds of the Founding Fathers, this history-rich city lays claim to being the place where the Declaration of Independence and Constitution were both drafted. More than 200 years later, Philadelphians are still ready to get all riled up in the name of independence, with a superb week-long celebration.

Fireworks Time: Concert & Fireworks Display with Sheryl Crow and The Roots goes from 8:30 – 11:00 p.m on July 4. The concert will begin around 8:30 and the fireworks around 10:30. The fireworks location will be Philadelphia Museum of Art on the Benjamin Franklin Parkway.

Starting May 5 through June 1, will be taking entries for their First Annual “Inn The Kitchen” Recipe Contest. One winner will be chosen in each of the following four catagories: Breakfast, Lunch, Dinner, and Deserts. Each Inn can enter one recipe in each of the four categories.

Here at, we have put a team together to cook up EACH AND EVERY recipe entry recieved! The staff will vote on their favorites, and the four winners will be announced on Friday June 4. Each of the winners will receive the following prizes:

Bison Tenderloin Steaks with Mushrooms Recipe

Greyhouse Inn B&BSalmon, ID.




1/2 lb. fresh mushrooms, whole if very small, quartered if large

2 T butter

1 T oil

2 T minced shallots or green onions

1/4 t salt

Pinch of pepper


Saute mushrooms in hot butter and oil for 5 minutes to brown them lightly, stir in shallots/onions and cook slowly for a minute or 2 more. Season and set aside.


6 bison fillet steaks, 1″ thick and 2 1/2″ in diameter, each wrapped in a strip of bacon

2 T butter, more if needed

1 T oil

1 or 2 heavy skillets just large enough to hold the steaks easily


A handsome presentation for these steaks is a platter decorated with whole baked tomatoes, artichoke hearts cooked in butter. Serve with them a good red Bordeaux.

Dry the steaks on paper towels. Place the butter and oil in the skillet and set over moderately high heat. When you see the butter foam begin to subside, indicating it is hot enough to sear and brown the bison steaks, saute them for 3-4 minutes on each side. They are medium rare if, when pressed with your finger, they offer a suggestion of resistance in contrast to their soft, raw state. Bison should be eaten medium or rare. Salt and pepper and serve on a warm platter. Discard a strip of fat if you wish.


Never Fail Sponge Cake Recipe

High Pointe Inn in Barnstable, MA.


Cook Time: 30 min Prep Time: 15 min

Yield: 12 servings


4 eggs separated

1 cup sugar

4 Tbsp. cold water

1 cup sifted cake flour

1 tsp. baking powder



Beat egg yolks and sugar together until very light. Add water. Sift together flour and baking soda. Add to batter. Beat egg whites until stiff. Fold into batter. Pour batter into well greased small angel food pan.

Bake at 325°F for about 30 minutes. Cool completely and invert onto cake platter.

Whip cream and slice strawberries. Set aside.

To serve, slice cake in half and fill with half the whipped cream. Top with remaining whipped cream and strawberries.
